Ingredients
- 11 oz orecchiette
- 7 oz cherry tomatoes
- 3.5 oz cooked ham (diced)
- to taste extra virgin olive oil
- to taste salt
- to taste oregano
- 0.35 oz pine nuts
- 2.5 oz basil
- 1.75 oz Parmesan cheese
- 1 oz pine nuts
- to taste coarse salt
- 2.1 oz extra virgin olive oil
How to Make Cold Pasta
Cook the orecchiette in plenty of salted water, then drain the pasta and season with a drizzle of oil.
Pesto preparation: put the basil in the blender, add the oil, Parmesan cheese, pine nuts, and a pinch of salt.
Blend intermittently for a few seconds; this way, the pesto won’t heat up too much, keeping its bright green color.
Cut the cherry tomatoes in half, then season with salt, oregano, and extra virgin olive oil and mix.
Season the orecchiette with pesto, add the cherry tomatoes and diced cooked ham.
Mix to distribute all the ingredients well and plate: your cold pasta is ready to be served!
