Today I made Fried Pizza Balls. I wanted to prepare an unconventional appetizer and present it to my guests with a nice platter of cold cuts and cheeses. I must say they loved it, they are delicious, you can’t stop at just one.

Ingredients
- 2 cups all-purpose flour
- 2 cups re-milled durum wheat semolina
- 1 1/4 cups water
- 2 tsps salt
- 1 tsp sugar
- 3 tbsps extra virgin olive oil
- 0.35 oz fresh brewer's yeast
- as needed vegetable oil for frying

Steps
In the bowl of the stand mixer, add water, sugar, and yeast and let it dissolve by running the mixer on low speed for a few minutes. You should use the dough hook for this recipe.
Add the flour and semolina and start kneading for a few minutes, still at low speed.
Add the salt and oil and increase the speed. Knead until the dough detaches from the sides.
Transfer the dough to a bowl and let it rise until it doubles in size.
Take the risen dough and form tiny balls, and let them rest for 10 minutes (the time needed to heat the oil).
Fry them in hot oil until golden brown, stirring occasionally.
Season with salt and serve hot or cold with cold cuts and cheeses.
