Vegan Orange Cake

Soft and fragrant orange cake, without eggs, milk, and butter… also suitable for those following a vegan diet or with intolerances. As you know, I don’t often make desserts “without” the essential ingredients, but this recipe truly amazed me because the result was beyond my expectations: the vegan orange cake is very soft, very delicious, and has little to envy from classic cakes. Moreover, it’s very easy and can be prepared in a few minutes, without a stand mixer or blender… try it yourself!

Ingredients

  • 1 3/4 cups all-purpose flour
  • 2/3 cup sugar
  • 1/2 cup water
  • 3/8 cup sunflower oil
  • 1/3 cup orange juice
  • orange zest
  • 1 tbsp baking powder
  • spices (cinnamon, ginger, or others as desired)

Preparation

  • Grate the zest of a large orange and squeeze its juice.

    Pour 1/3 cup of juice into a bowl, add the zest, the water, and the oil. Mix with a whisk.

  • In a separate container, mix the sifted flour with the baking powder, sugar, and spices. I used a pinch of cinnamon, a pinch of ginger, and some vanilla, but you can use the spices you prefer (or omit them if you don’t like them).

  • Add the dry ingredients to the wet ingredients, a little at a time, blending with the whisk.

    You should obtain a very soft, lump-free batter.

  • Pour the batter into the cake pan, lined with parchment paper.

    Level it and place it in a static oven at 180°C (350°F). Bake the cake for about 40 minutes, as always checking doneness with a toothpick.

  • At the end, let the cake cool without removing it from the pan (otherwise, it might crumble since it doesn’t contain eggs).

    When it’s at room temperature, transfer it to a plate and sprinkle it as desired with powdered sugar.

  • The vegan orange cake is ready, very soft, light, and fragrant.

Tips and Notes

The cake stays soft for 2-3 days, in a covered container.

Use sunflower oil or a very mild olive oil.

Adjust temperature and baking time based on your oven’s characteristics.

With the same batter, you can make a loaf cake or muffins.
