Today I made some whole wheat ring cookies with chocolate chips, rustic and super quick cookies! Perfect for breakfast or to dip in milk, they can be made in a few minutes with brown sugar and whole wheat flour, for a healthier yet delicious version.

The texture is crumbly thanks to the quick shortcrust pastry, while the dark chocolate chips give it that irresistible touch. No need for a donut mold: just shape the rings by hand and bake them in the oven or air fryer as I did.

They smell like home and keep perfectly for days in a tin can. If you love simple cookies with character, these are for you!

Ingredients

  • 1 1/4 cups whole wheat flour
  • 1 large egg
  • 1/4 cup butter
  • 1 tsp baking powder
  • 1/3 cup brown sugar
  • 3/4 oz chocolate

Steps

  • Pour the flour into a bowl or food processor, add the baking powder, sugar, a pinch of salt, and some lemon zest for flavor or a pinch of vanilla.

  • Add the softened butter in pieces and the egg, knead well, and finally add chocolate chips or chunks and mix everything.

  • Divide the dough into 10 pieces, make rolls, and form into rings.

  • Place on a sheet covered with paper and bake at 355°F for about 15 minutes or in the air fryer at 347°F for about 12 minutes, turning them.
