Chocolate is made from Cocoa Paste (a mixture of cocoa butter and dry seed extracts), sugar, and in the case of milk chocolate, with powdered milk. White chocolate (which technically is not chocolate) does not contain dry seed extracts of cocoa, but only cocoa butter, sugar, and powdered milk. All chocolate manufacturers also add soy or canola lecithin, a natural emulsifier. The most reputable ones use only non-GMO products, and chocolate that contains no other vegetable fats (besides cocoa butter) will certainly taste better and have a better texture.
