Ingredients

  • 1 broccoli
  • 7 oz potatoes
  • 1 egg (large)
  • 1 tbsp Grana Padano cheese, grated
  • as needed breadcrumbs (about 4-5 tablespoons)
  • 1 clove garlic (optional)
  • extra virgin olive oil
  • salt
  • pepper

Preparation

  • Clean the broccoli by separating the florets and wash them under running water.

    Peel the potatoes, rinse, and dice them.

  • Boil the potatoes and broccoli florets in salted boiling water for about 7-8 minutes.

    Drain them and transfer to a bowl to cool down (1). Mash them with a fork or chop them with a knife.

  • Add salt, pepper, the Grana, minced garlic (if desired), and the beaten egg. Mix, then add breadcrumbs as needed to obtain a tender but workable mixture (2).

  • Shape the croquettes into your preferred shape and size, making sure they’re all the same size. As you prepare them, roll them in breadcrumbs.

    Place the croquettes on a baking tray lined with parchment paper (3) and drizzle them with a bit of olive oil.

  • Bake in a fan oven at 375°F for about 25 minutes, or until they develop a slight crust on the surface.

Advice and Notes

You can adapt the recipe also for cauliflower or Romanesco broccoli.

If you have a few more minutes, you can steam the potatoes and broccoli, so they remain drier.
