Well, I turned it into a ricotta mousse with pineapple, fresh and creamy that smells of summer… and without even turning on the stove! This is how this very simple and really delicious recipe was born! Of course, you can also use fresh pineapple, which is even more fragrant and natural.

You only need a few ingredients: ricotta, cream, and pineapple. The result? A spoon dessert that’s soft, fragrant, and super quick to prepare. Perfect served in cups or small glasses, perhaps enriched with some mint leaves, grated coconut, or crumbled cookies.

Ingredients

  • 12.3 oz ricotta
  • 2.8 oz powdered sugar
  • 1 tbsp honey
  • 5.3 oz vegetable cream for whipping
  • 7.1 oz pineapple (fresh or canned)
  • 1 tsp lemon juice

Steps

  • Blend the pineapple with the lemon juice until you get a smooth puree. If you want a mousse with pieces, blend only half of the fruit.

  • In a bowl, work the ricotta with the powdered sugar until you get a smooth cream.

  • Separately, whip the cream to stiff peaks.

  • Gently fold the cream into the ricotta, spatulating from the bottom up.

  • Add a few tablespoons of pineapple puree to the mixture or pineapple pieces.

  • Fill the cups with a base of puree, a layer of ricotta, and more puree until the ingredients are finished.

  • Decorate with pieces of pineapple and a sprinkle of grated coconut.

  • Place in the fridge for at least 30 minutes before serving.
