Zeppole in Air Fryer. If you want to enjoy this traditional dessert without the hot oil and kitchen odors, the air fryer is the perfect solution.

With this lighter version, you get fluffy, golden, and fragrant zeppole, without sacrificing their irresistible softness.

Is it possible to make perfect zeppole using an air fryer? Well, yes! I tried this “experiment” and I must say the result was surprising.

The air-fried version of this delicious traditional treat is easy to make and guaranteed to turn out great!

In my house, we love them, and I make them both baked and fried in the traditional way.

This time I wanted to try making them in the air fryer, so without oil and with quick cooking done in two stages with two different temperatures.

In short, they’re not really fried… but they look like they are! And they’re much lighter.

But what surprised me the most is that they don’t deflate after cooking but instead remain nice and fluffy.

You all probably know the Zeppole di San Giuseppe: a typical dessert for Father’s Day, which coincides with March 19th, the day dedicated to San Giuseppe.

It consists of soft choux pastry filled with custard and garnished with sour cherries or candied cherries and powdered sugar.

I made 8 because they are big and I’m very satisfied. I want to share this experience with you, so experiment succeeded.

On Sunday I’ll have some friends over for lunch, and after this trial, I think I’ll serve them at the end of the meal.

Ingredients

Zeppole in Air Fryer

  • 1 cup cups water
  • 5.64 tbsp butter
  • 1.2 cups all-purpose flour
  • 1 pinch salt
  • 4 eggs

  • Small Pan
  • Piping Bags

Steps

Zeppole in Air Fryer

  • In a saucepan, pour the water, add the butter, the salt, and let it melt on the stove.

  • As soon as bubbles start forming on the bottom, add the flour all at once and stir.

    Cook the dough for a couple of minutes until it forms a single ball, and the bottom of the pan becomes lighter.

  • Remove the dough from the heat and let it cool for just a minute.

    Then incorporate the eggs, one at a time: add the first egg and mix to incorporate it. Once well blended, add the second.

    (I used an electric mixer because my arm hurts).

    But it can also be done without a mixer.

  • Mix well to obtain a homogeneous and nice thick dough.

    Place the obtained dough in a piping bag and shape your zeppole on a parchment paper cut to fit the fryer basket or plate.

  • Place the basket in the air fryer and cook in two stages: first at 356°F for 10 minutes, then at 392°F for another 10 minutes.

    (Obviously check every fryer has its own timing).

Tips

Use a star nozzle of at least 0.4 inches to make the zeppole.

Cut the parchment paper according to the size of your air fryer, shape the zeppole, and then place everything in the basket.

Zeppole di San Giuseppe cooked in the air fryer can be stored in the refrigerator for up to 2 days.


Zeppole in air fryer are a lighter alternative to the traditional version fried in oil.

However, it’s important to remember that there is a certain amount of butter in the zeppole, so it’s advisable to consume this dessert in moderation.
