Today’s sweet recipe: apple and date cake with whole wheat flour without added sugar.
Soft, rustic, and full of apple, this cake is ideal for those like me who don’t want to give up breakfast or a snack made with a good slice of cake but at the same time try to reduce the amount of sugar in their diet. This cake, besides being super good, is also a friend of our health because we use whole wheat flour and not very refined flour like a 00. Following the same idea, I also made some cookies with peanuts and dates that are simply divine.
There are often recipes around that do not use sugar but still use other sweeteners like stevia, maltitol, or erythritol. In this recipe, we won’t use any of these but sweet dates and a teaspoon of honey that will give the sweet part to our cake along with the apples.
The preparation of the whole wheat apple and date cake is very simple, and in a few minutes, we’ll have the batter ready to bake. Already during cooking, you will start to smell a delicate and tasty aroma that will make for a splendid wait.

Ingredients for the Whole Wheat Apple Cake
- 2 apples (I used Fuji)
- 4 eggs
- 5 tbsp olive oil
- 2 cups whole wheat flour
- 0.4 cup apple juice (100% no added sugars)
- 1 tbsp baking powder
- 10 pitted dates
- 1 tsp honey

Let’s Prepare the Apple and Date Cake Together
In the mixer’s bowl, we put whole eggs (in the photos, you see fewer ingredients because I made half the dose), and we make the eggs fluffy and frothy. Meanwhile, in the chopper, we put the apples without the core and the pitted dates and chop them quickly for a few seconds.
In the mixer’s bowl, add to the eggs the liquids, then the apple juice and olive oil, blend, and then add the whole wheat flour, the baking powder, and honey, and mix again.
Add to the obtained batter also the previously chopped apples and dates and mix well, maybe helping with a spatula. Grease a 9-inch pan and pour the cake batter into it. You can also use a baking spray.
Bake in a preheated oven at 340°F for 40 minutes. Always do the toothpick test before removing it from the oven: insert a toothpick in the center of the cake; if it comes out dry, the cake is ready to be removed from the oven; otherwise, leave it a few more minutes inside.

If you wish, you can also add some dried fruit (100 grams) to chop with the apples and dates, and if you don’t have 100% apple juice, you can substitute it with milk or a plant-based drink.
