Ingredients
- 7.05 oz smoked salmon
- 10.58 oz pineapple (net weight)
- extra virgin olive oil
- pepper
- herbs (thyme, mint or others to taste)

Preparation
Clean the pineapple by removing the skin and the central core. Cut it into slices, then into chunks.
If using canned pineapple, drain the slices well and pat them dry with kitchen paper before cutting into pieces.
Season the pineapple with a drizzle of extra virgin olive oil, a pinch of pepper, and some thyme, mint, or other herbs as desired.
Take the salmon and cut it into chunks. If you have thinly sliced salmon, cut strips and fold them a couple of times to create some thickness.
Now assemble your skewers by alternating pineapple with smoked salmon. I recommend using short skewers, so you can serve them as finger food.

If you want to prepare them in advance, store them in the fridge, but serve at room temperature.
Tips and Variations
You can use cold-smoked or hot-smoked salmon.
If you prefer, you can grill the pineapple slices on a non-stick pan. A few seconds on each side will suffice.
