Ingredients

  • 1 eggplant
  • 8 oz puff pastry
  • 3.5 oz provola cheese
  • 1 egg yolk
  • 2/3 tsp salt
  • 2 tbsp extra virgin olive oil
  • 1 sprig rosemary
  • 1 dried red chili pepper

Steps

  • Peel the eggplant and slice it.

  • Arrange the eggplant slices on a baking sheet lined with parchment paper and season with salt, olive oil, chili and chopped rosemary.

  • Bake in the oven at 374°F for 30 minutes. You can also grill them or cook them in the microwave; they will be tasty either way.

  • Open a roll of puff pastry and, using a 2 3/4-inch round cutter, cut out 14 discs.

  • On each puff pastry disc place a slice of eggplant and a small piece of provola, then fold it like a taco.

  • Place the eggplant and cheese tacos on the baking sheet lined with parchment paper (you can use the same sheet you used to roast the eggplant).

  • Brush the tacos with the egg yolk using a food brush.

  • Bake in the oven at 374°F for 20 minutes.
