Ingredients

  • 1 sheet puff pastry (rectangular)
  • 5.3 oz cooked ham
  • 2.1 oz provola cheese (or scamorza)
  • 2 tablespoons green olives (pitted)
  • 1 egg

Preparation

  • Drain the green olives well from the brine and slice them.

    Unroll the puff pastry on the work surface and divide it into two parts, without cutting it.

  • Place slices of ham (not all) on one half, add the provola, also sliced, and some of the olives (1).

  • Cover with the remaining slices of ham and overlap the other half of the puff pastry.

    Seal well along the edges by pressing with your fingers and make small cuts on the surface with a knife.

  • Brush with the beaten egg, then add the remaining olives in slices (2).

  • Place the pie on a baking tray with its parchment paper.

    Bake in a fan oven at 356-365°F for about 25 minutes, or until golden on top and dry at the base.

Tips and Notes

You can also fill the pie with other cold cuts, like speck or mortadella.

I recommend using provola or smoked scamorza. If you want to use mozzarella, dry it well from the liquid, otherwise it will wet the pastry.

You can prepare the pie in advance and heat it slightly when needed.
