Ingredients

  • 4.2 oz semolina pasta (Rigacuore)
  • 4.6 oz bell peppers
  • 4 Italian sweet peppers
  • 0.7 oz leek
  • 0.4 oz celery
  • Half carrot
  • 2 tbsp extra virgin olive oil
  • 1.4 tsp salt
  • 1 tsp pickled capers
  • 1 tsp chopped parsley
  • 1 clove garlic

Steps

  • All the vegetables julienned in a pan with oil and salt but after sautéing the garlic, leek, and carrots with celery.

  • Ten minutes of cooking, then add the capers and parsley.

  • Leave just a few strips of red pepper to garnish the plates before serving, put the rest in the chopper.

  • Complete the chopped dressing with freshly ground black pepper, a drizzle of EVO oil, and fresh parsley.

  • Season the Valentine’s Day pasta with the pepper dressing.
