These bread rolls with zucchini and pancetta are one of my all-time favorite recipes: I make them in 5 minutes, stress-free and… they always disappear in an instant! 😍

Perfect as a quick appetizer, for a tasty aperitif or to put on a party buffet, these savory rolls made with sandwich bread are super crispy on the outside and very soft inside. You can cook them in the air fryer (they come out nicely golden and light!) or in a pan, if you prefer a more “rustic” touch.

The combination of pancetta and zucchini is great, but you can customize them with cream cheese, provola, mozzarella or spices. They’re also ideal for using up sliced sandwich bread or the classic sliced white loaf you already have at home, which I always have leftover.

BREAD ROLLS with BACON and zucchini

Ingredients

  • 2 slices sandwich bread
  • 1 zucchini
  • 3.5 oz provola cheese
  • 6 slices pancetta (sliced)

Steps

  • Flatten the bread with a rolling pin without pressing too hard.

  • Peel the zucchini (washed and dried) into thin slices with a vegetable peeler and arrange the slices on the bread; add the sliced pancetta and pieces of provola cheese.

  • Roll up tightly and cut into 4 pieces.

  • At this point you can cook them in a pan with a drizzle of oil and a closed lid for a few minutes, or in the air fryer for 6-7 minutes at 356°F
