Cheesy Cauliflower Casserole. A tasty and flavorful way to cook cauliflower in a different way than usual.

It’s perfect for many occasions: as a main dish for a quick family dinner, as a side dish in a meat menu for lunches and dinners with friends or relatives, and even as a substantial appetizer.

This casserole can also be prepared the day before and is perfect for a “lunchbox” break during the week or a picnic.

To prepare this cauliflower casserole, we will use a few inexpensive ingredients: cauliflower, potatoes, smoked scamorza for the filling, and then eggs, grated cheese, and breadcrumbs to give texture to the casserole mixture. Finally, we will use oil, pepper, salt, and parsley for seasoning and flavor.

For a richer version, you can add slices of cooked ham in the center.

Obviously, all the ingredients can be replaced according to your personal taste.

You can also stuff it with whatever you have left in the fridge, roughly following the quantities suggested in this recipe, to make a deliciously creative “fridge-emptying” recipe.

Cauliflower recipes are among my favorites; moreover, it’s a vegetable that’s very good for you. In autumn, it’s nice to bring it to the table both as a main course like Cauliflower Pasta and as a side dish like the cauliflower strudel. If you don’t like the smell during cooking, try immersing a piece of bread soaked in vinegar in the boiling water!

Regarding cooking methods, I have included both oven and air fryer with times and temperatures.

Ingredients

Cheesy Cauliflower Casserole

  • 1 kg cauliflower
  • 500 g potatoes
  • 2 eggs
  • 200 g provola (or scamorza or mozzarella or other cheese)
  • 80 g parmesan
  • 60 g breadcrumbs (+ for the baking dish)
  • to taste parsley
  • salt
  • to taste pepper
  • to taste extra virgin olive oil

Steps

Cheesy Cauliflower Casserole

  • Clean the cauliflower, remove the tough central part, and cut it into florets.

    (Do not discard the tougher central stem; you can use it, cut into small pieces, for a vegetable soup).

    Peel the potatoes and rinse them thoroughly. 

    Cut the potatoes into chunks.

  • Boil both the cauliflower and potatoes in salted boiling water for 15/20 minutes.

    Once cooked, drain them and transfer to a bowl, allowing them to cool slightly.

  • Salt and pepper to taste.

    Now mash everything with a fork to create a purée.

    Add the eggs, grated cheese, and mix the mixture well.

  • Also add the chopped parsley, oil, and mix everything well.

    Take a baking dish and grease it, then sprinkle with breadcrumbs. Pour half of the cauliflower and potato mixture and level it well over the entire surface of the baking dish.
    Add the sliced scamorza cheese.
    Add the remaining cauliflower and potato mixture, and level it well.

  • Sprinkle the surface with plenty of breadcrumbs for a tasty gratin.

    Finally, drizzle with some oil and bake in a fan-assisted oven at 375 °F for 35 minutes.

    Air fryer cooking at 375 °F for 25 minutes.

    (Tip for air fryer cooking: adhere to these parameters, with a maximum height of 1-1.5 inches. Cooking is complete in 20/25 minutes in a preheated air fryer at 375°F. If your basket is wide, you can prepare using even more cauliflower and potatoes, always with a quarter-hour of cooking, just maintain this height).

    (Obviously check, as each air fryer has its own times).

Tips

Once it’s at room temperature, you can store it in the refrigerator for 2 days, covering the baking dish with plastic wrap.

Instead of cauliflower, you can use an equal weight of broccoli florets and proceed as per the recipe.
