The cream is fluffy, fragrant, and light, perfect to enjoy in small cups after lunch or as a summer snack. If you don’t want alcohol, no worries: just replace the rum with rum extract or skip it.

Ingredients
- 1 2/3 cups whipping cream
- 1/3 cup brown sugar
- 2 tablespoons lime juice
- 5 leaves mint
- 1 tablespoon white rum
Steps
Place the mint leaves with the sugar, lime juice, and grated zest in a bowl and mash them well.
Add the rum, mix, and set aside.
Whip the cream with a hand mixer; I recommend using plant-based cream, it’s better for the recipe.
Add the strained juice, mix, and pour into cups, decorate with lime slices and mint leaves.
Chill in the fridge for about an hour before serving.
