These tasty and simple sweet potato wedges wrapped in prosciutto are ready in 30 minutes and can accompany both meat and fish dishes.

I seasoned them with a few sprays of EVO oil and chopped rosemary, but as the side dish comes out of the oven, we can also add a drizzle of honey that will deliciously melt with the sweet potatoes for a very interesting taste!

INGREDIENTS

  • 3 sweet potatoes (or yams)
  • to taste rosemary (a few sprigs, chopped)

  • I wash and peel the sweet potatoes then cut them into wedges.

    I place them in a bowl, adding in the fresh chopped rosemary, a pinch of pepper, and a few sprays of good quality extra virgin olive oil.

  • I cut each slice of prosciutto into two strips and wrap each slice of prosciutto around the sweet potato wedges placing each wedge on the baking sheet, which you can line with parchment paper if you like.

  • I bake in a preheated oven at 392°F (200°C) for about 20 minutes or according to the characteristics of your home oven, and to verify, you just need to… eat one!
