Pasta with Salmon Cream

Pasta with Salmon Cream is a creamy and flavorful first course with enveloping cream and pieces of salmon, tasty with a delicate flavor ready in less than 20 minutes.

I love salmon and today I prepared a creamy pasta dish with a ricotta base. The result is excellent, the salmon cut into pieces and quickly cooked in a pan with very little oil, gives a delicious flavor.

Salmon is a food to be considered not only for the pleasure it gives to the palate: it is in fact a fish rich in essential nutrients for our body, which should never be missing in our daily diet.

The recipe I propose is a useful way to reconcile two aspects of our dining that do not always go hand in hand: indulgence and health.

I used ricotta cheese which you can replace with cream cheese to your taste. I enriched the dish with fresh chopped parsley but you can use chives if you want, and as for the pasta, use whichever you like most, it’s also excellent with egg tagliatelle and gnocchi.

The result will be an experience worth trying!

Ingredients

Pasta with Salmon Cream

  • 11 oz pasta (short or long as preferred)
  • 14 oz salmon (fresh)
  • 1 clove garlic
  • 6.5 oz cow's milk ricotta (creamy)
  • 3 tbsp extra virgin olive oil
  • as needed parsley (or chives)
  • as needed black pepper
  • salt

Steps

Pasta with Salmon Cream

  • Remove the skin from the salmon fillet and cut it into small pieces. Alternatively, you could also use steaks, although the fillet is leaner.

    Add the salmon, stir and let it brown for a couple of minutes.

    Cook for three or four minutes over medium heat, not much is needed.

    Now remove the garlic.

  • Pour the ricotta into the container of a mixer, or a blender, add the cooked salmon and blend everything until you get a homogeneous cream.

    (But not all, set aside some pieces to decorate the plate).

  • Pour the obtained cream into the same pan in which the salmon was cooked, while the pasta cooks, add a little cooking water to soften the cream.


    Cook the pasta in salted boiling water and drain it 2 minutes before what is indicated on the package.

    Drain the pasta and transfer it to the pan with the salmon cream; cook for another 1/2 minutes on low heat, stirring often.

  • Sprinkle with fresh chopped parsley or chopped chives.

    A sprinkle of pepper and it’s ready.

Tips

It would be ideal to consume the pasta with fresh salmon immediately, however, if you prefer, you can keep it in the refrigerator for a day, keeping it well-closed in a container. The next day, heat it with a splash of cream or hot water.
