First, prepare the avocado mayonnaise by pouring the oil, water, vinegar, mustard, salt, and, if desired, some lemon juice into a high-sided container or glass.
Begin to blend using an immersion blender, initially keeping it still at the bottom and then moving it slightly up and down to form a dense sauce.Meanwhile, cut an avocado in half, remove the pit and the skin, and cut it into cubes.
Add it to the mayonnaise and continue blending until a dense and perfectly amalgamated mayonnaise forms.
The avocado mayonnaise is ready! You can use it immediately or store it in the fridge until it’s time to use it.
