Stewed Lentils are a legume side dish that is part of our tradition, and unfortunately, we only remember them on New Year’s Eve as a symbol of good luck. Cooked stewed, they are very tasty and suitable for vegetarians. Also great as a sauce for pasta. Served with zampone, cotechino and mashed potatoes, they are the classic end-of-year dish.

Ingredients
- 3/4 cup lentils
- 1 carrot
- 1 stalk celery
- 1 1/2 tbsps extra virgin olive oil
- 1 shallot
- 1 clove garlic
- 2 sprigs rosemary
- 3 leaves sage
- 2 leaves bay leaf
- 7 oz tomato puree
- 1 g fine salt
- 2 cups water boiling water

Steps
Coarsely chop carrot, celery, and shallot and slowly sauté for 5 minutes in a pan with the oil and garlic clove, which will then be removed. Put the lentils in a colander and rinse them under running water, drain and add them to the sauté along with rosemary, sage, and bay leaf tied together with kitchen string. Stir and add the tomato puree.
Also pour in the boiling water, lower the heat and cook for 50 minutes with the lid on. Salt and remove garlic and herb bundle. A classic is to serve Stewed Lentils as a side dish to Cotechino.
Storage
Cooked lentils can be stored cold in the refrigerator in an airtight container and consumed within 2 – 3 days at most. If stored in the freezer, thaw them in the microwave and reheat in a pan when needed.
