Steps to Make Homemade Pizza Dough

  • Start by placing in the stand mixer bowl in the following order: flour, sugar, yeast, water (keeping one tablespoon aside), and oil. Attach the dough hook and set the mixer to speed 2, let it work for 10 minutes, then turn off, cover with a cloth, and let it rest for 10 minutes covered.

  • After the resting period, turn on the mixer again at speed 2, add the salt and the water kept aside, and let it go for 5 minutes, then turn off, transfer the dough (which will be well kneaded) onto a lightly floured pastry board and shape it into a ball, then place the dough in a bowl covered with food wrap, leave it in a closed and dark place, let it rise until it doubles in volume (it will take about 4 hours, times depend a lot on external temperatures).

  • Once the dough has doubled in volume, give it a fold in the bowl and cover with wrap to rise for 1 hour.

  • After 1 hour, turn the dough out into a well-oiled rectangular baking pan if you want a high and fluffy pizza, or if you want a thinner pizza, divide the dough into two pans, spread the dough with slightly oiled hands, then let it rest so it relaxes (30 minutes is enough), then spread it again with your hands to the edges (by now it will be very pliable), put the pan with the dough to rise in the switched-off, closed oven for 1 hour.

  • After 1 hour, remove the pan from the oven, heat it to 482°F, when it’s hot, season the pizza as you like (with tomato, white, etc.) and bake, cook for 30 minutes always checking the cooking because each oven is different, in the end, the pizza should be very well browned at the edges, eat it hot or cold and you’ll taste how good it is! Enjoy your meal!

  • For those not using a stand mixer, just follow the order of ingredient insertion and knead by hand for at least 20 minutes, then after creating the dough, follow the same procedure as above!

Tips

The all-purpose flour I use in this recipe must have a minimum of 13 g of protein (it helps to give more elasticity and strength to the dough), you find this information written on the packaging of each type of flour.
