Ingredients
- 1 sheet puff pastry
- 9 oz cooked lentils (stewed)
- 3.5 oz pre-cooked cotechino
- rosemary (or parsley)
- butter (for the molds)

Preparation
Cook the lentils in stew, following my recipe, or in the way you are used to.
Boil the cotechino following the instructions on the package, then remove it from its bag, peel it, and cut it into small cubes.
Open the puff pastry on the work surface and divide it into 20 squares (or into 12, if you want to make larger baskets). If you have a round pastry, you can cut out discs of your preferred diameter.
Grease a muffin tin with a little butter, place the puff pastry in the individual molds and prick it a little in the center so that it doesn’t puff up too much.
Put everything in a convection oven at 350-375°F and bake for 12-14 minutes, until golden brown.
Remove the puff pastry baskets from the molds (press them in the center if they have puffed up anyway).
Fill them with the lentils and add a few cubes of cotechino. If desired, season with some chopped rosemary or other herbs.
The puff pastry baskets with lentils and cotechino are ready to be served… enjoy your meal!
Tips and Notes
Let the lentil sauce thicken, otherwise the puff pastry would get soggy and not be crunchy.
You can replace the cotechino with zampone, sausage, or salami.
I recommend assembling the baskets at the last moment, but you can cook the lentils and cotechino in advance (even the day before).
