- 1/2 cup powdered sugar
- 1 cup flour
- 1 cup potato starch
- 3 hard-boiled yolks
- 1 pinch salt

Steps
In the stand mixer bowl, I poured all the ingredients, including the hard-boiled yolks mashed with a fork.
I worked with the paddle until all the ingredients were combined.
I wrapped it with plastic wrap and let it rest in the fridge for about 30 minutes.
I took the dough and rolled it out with a rolling pin, not too thin.
With the flower-shaped cutter, I made the canestrelli.
I baked for about 15 minutes at 356°F
Once cooled, I dusted with powdered sugar.
