The marinade I recommend can always be replaced with whatever you prefer if it’s not to your taste. I love this dish because it’s simple and quick; for this reason, I always have some in the freezer, which I defrost in the microwave when needed. Alternatively, I let them defrost in the refrigerator for about 24 hours. For those who want to make them even more succulent, I suggest placing a slice of lard between each piece. However, the cooking remains the same.

Ingredients
- 1.5 lbs Single-cut adult beef
- 6 leaves sage
- 2 sprigs rosemary
- 2 sprigs thyme
- 2 sprigs oregano
- 2 cloves garlic
- 1 lemon zest
- 4 tbsps extra virgin olive oil

Preparation
Take the meat out of the refrigerator at least 40 minutes before cooking to bring it to room temperature. Pat it dry with a paper towel and cut it into strips about 0.8 inches thick. Cut each strip into chunks, about 0.8 inches each.
Place the obtained stew in a large bowl and season it with aromatic herbs and two finely chopped garlic cloves using a sharp knife or cutter. Add the extra virgin olive oil as well.
Adjust the salt and pepper to taste and finally add the grated zest of one lemon. Mix well to combine all the ingredients.
Cover with plastic wrap and let it marinate for about twenty minutes. After this time, prepare the skewers: you should get about 12.
Heat a grill pan or a flatbread pan and cook them. Keeping a high flame, turn them around until a crust forms: it will take about 10 minutes. Try not to exceed the cooking times and do not lower the flame to avoid hardening.
