Savory pies are simple and quick to prepare. They are very versatile, in fact, they can be filled according to your tastes or based on what you have in the fridge.

For this savory pie, I used speck, but if you have some cold cuts in the fridge, you can use those. This way the savory pie will turn out to be a perfect fridge-cleaner.

Ingredients

For the filling

  • 1 zucchini (grated)
  • 3.5 oz speck, diced
  • 1.4 oz Parmesan cheese
  • 1 egg
  • 6 oz cream cheese
  • 2 tbsp milk
  • to taste salt
  • 2 cups all-purpose flour
  • 1/3 cup water
  • 1/3 cup extra virgin olive oil
  • to taste salt

  • 1 Rolling pin
  • 1 Grater

How to prepare the savory pie with zucchini and speck

  • First, prepare the dough. In a bowl, mix the flour, water, oil, and salt to taste. Knead by hand until you get a smooth, non-sticky dough. (If necessary, add more flour).

  • Roll out the dough with a rolling pin on a floured surface and place it into a 10-inch tart pan lined with parchment paper. If you want to take a look at my pan, you can find it here.

  • Prick the base with a fork and set aside for a moment.

  • In a bowl, add grated zucchini, diced or sliced speck, grated Parmesan, egg, cream cheese (I used Philadelphia), milk, and salt. Mix with a spoon until you get a homogeneous mixture.

  • Pour the mixture into the baking pan. Level it off and bake in a preheated static oven at 350°F. Let it bake for about 35-40 minutes. Please check cooking times based on your oven.

  • Remove from oven, let cool slightly, and serve.

  • The savory pie with zucchini and speck is delicious both hot and cold.

  • Can I make it in advance?

    Yes. The savory pie can be prepared in advance, as it is good both hot and cold. If you prefer it hot, just reheat it before serving.

  • Can I freeze it?

    If you have used all fresh ingredients (not frozen), you can freeze it. Then just take it out an hour before consuming and heat it in the oven.
