Ingredients

  • 9 oz pork loin (in thin slices)
  • 1 apple
  • 1.5 oz raisins
  • 0.7 oz pine nuts
  • 1 tbsp breadcrumbs
  • 1/4 cup white wine
  • extra virgin olive oil
  • butter
  • semolina flour (or flour)
  • salt
  • herbs (to taste)
  • lemon juice

Preparation

  • Soak the raisins in warm water for about 15 minutes, until they are soft, then squeeze and dry them.

    Peel the apple and cut it into small cubes, sprinkling with lemon juice to prevent browning.

  • Melt a small piece of butter in a pan, add the apples and raisins and cook for 5-6 minutes, until the apples are tender.

    Lay the pork loin slices on a cutting board, salt them, sprinkle with herbs and breadcrumbs.

  • Top with the apples and raisins (1), then roll them up to form rolls. You will have some filling left, which will be used later.

    Tie them with twine and coat them in semolina (2).

    In the same pan, add a drizzle of olive oil and brown the rolls on all sides. Deglaze with white wine and lightly salt them.

  • Add the leftover apples and raisins and pine nuts. Lower the heat a bit and cook for 8-10 minutes, depending on the thickness of the meat. If necessary, moisten the bottom with hot water or broth.

  • Pork rolls with apples and raisins are ready, serve them hot with their cooking sauce… enjoy your meal!

Tips and Notes

For this preparation, the meat must be cut thinly, if necessary, pound the slices with a meat tenderizer.

You can use different varieties of apples, as long as they are firm and not mealy. You can omit the pine nuts if you don’t have them.

Pork loin can be replaced with veal or turkey slices.
