Ingredients for bacon waffles

  • 10.6 oz potatoes
  • 3.5 oz smoked bacon
  • 1.8 oz flour
  • 3 eggs
  • 2 tbsps beer
  • 1 tbsp chopped parsley
  • to taste salt
  • to taste butter (for the waffle iron)
  • 3.5 oz stracciatella cheese

Preparation of bacon waffles

  • Peel the potatoes, wash them, and grate them. Put them in a cloth and squeeze well to remove excess water.

  • Place the potatoes, flour, eggs, salt, and beer in a bowl and mix until a homogeneous mixture is obtained.

  • Incorporate the parsley, cover the mixture, and let it rest in a warm and dry place for 30 minutes.

  • Heat the waffle iron and brush with a little melted butter. Place a slice of smoked bacon on the iron, pour a ladle of batter in the center, and let it cook until the waffles are golden brown.
