  • 3 tablespoons Genovese pesto
  • 2 tablespoons extra virgin olive oil
  • to taste salt
  • 4.2 oz speck
  • 5.3 oz cherry mozzarella balls
  • to taste cherry tomatoes

How to make easy and quick grilled eggplant skewers

  • Start by washing the eggplants. Trim the ends, then slice them about 1/2 inch thick.

  • Transfer them to a baking sheet lined with parchment paper, brush with oil, and season with salt.

  • Proceed by baking the eggplants at 392°F for about 10 minutes, or until golden.

  • At the end of cooking, take the eggplants and stuff them with pesto, a slice of prosciutto, and roll them up.

  • Take the skewers and skewer first a cherry tomato then the eggplant rolls alternating with mozzarella balls.

  • You can serve them immediately or prepare them well in advance!
