Grandma’s Potatoes

Grandma’s potatoes, the delicious potatoes my Grandma Lina always made for me when I was little. You should know that I grew up with my grandma, and she would always delight me with many treats! Potatoes are an affordable food, and with little, I assure you that you’ll have a dish to lick your lips, good always but especially in summer! Ingredients for Grandma’s Potatoes

  • 1 lb potatoes, with skin, cooked, boiled
  • 5 tablespoons extra virgin olive oil
  • 2 tablespoons white wine vinegar
  • 2 cloves red garlic
  • 1/2 bunch parsley (fresh)
  • 1/2 teaspoon fine salt
  • black pepper (abundant)

Let’s Prepare Grandma’s Potatoes Together!

  • Wash the potatoes (all medium-sized) well with their skins, place them in a tall and spacious pot, cover them with plenty of cold water, bring to boil until cooked (about 1 hour and 30 minutes). To check if they are cooked, you can poke them with a fork. Then let them cool completely in the pot with their water. If it’s convenient, I boil them in the evening after dinner and use them the next morning.

  • Once cooled, peel them gently, cut them into slices about 1/2 inch thick, then place the slices on a plate (or 2 if needed) without overlapping. Set aside.

  • Wash and dry the parsley well, finely chop it together with the garlic cloves, pour everything into a bowl, then add the salt, pepper, oil, vinegar, and mix well until you get a nice emulsion.

  • Pour the dressing over the boiled potato slices, spread it well with a spoon, cover the plate with food wrap and keep it in the fridge for at least 2 hours. Before consuming, just take them out of the fridge 10 minutes earlier. Enjoy Grandma Lina’s potatoes!
