Let’s Prepare Grandma’s Potatoes Together!
Wash the potatoes (all medium-sized) well with their skins, place them in a tall and spacious pot, cover them with plenty of cold water, bring to boil until cooked (about 1 hour and 30 minutes). To check if they are cooked, you can poke them with a fork. Then let them cool completely in the pot with their water. If it’s convenient, I boil them in the evening after dinner and use them the next morning.
Once cooled, peel them gently, cut them into slices about 1/2 inch thick, then place the slices on a plate (or 2 if needed) without overlapping. Set aside.
Wash and dry the parsley well, finely chop it together with the garlic cloves, pour everything into a bowl, then add the salt, pepper, oil, vinegar, and mix well until you get a nice emulsion.
Pour the dressing over the boiled potato slices, spread it well with a spoon, cover the plate with food wrap and keep it in the fridge for at least 2 hours. Before consuming, just take them out of the fridge 10 minutes earlier. Enjoy Grandma Lina’s potatoes!
