Delicious and very soft mini pandoro, a great idea for a Christmas breakfast or as a gift for your guests. The dough is not the same as pandoro, but is similar to that of a donut or muffin… it is prepared in a few minutes with regular baking powder, and is flavored with orange and lemon zest. Ingredients
- 2 cups all-purpose flour
- 2 eggs (large)
- 3/4 cup sugar
- 1/4 cup vegetable oil
- 2/3 cup milk
- 1 packet baking powder
- lemon zest
- orange zest
- vanilla extract
- powdered sugar

Preparation
With the help of a mixer (or in the stand mixer), beat the eggs along with the sugar, grated zest of half an orange and one lemon.
When the mixture is fluffy and light, add a teaspoon of vanilla extract and the vegetable oil, continuing to mix with the beaters.
Gradually add the milk, alternating with the sifted flour and baking powder.
You will get a smooth, homogeneous, and rather liquid dough.
Grease the molds with a release agent or a little melted butter.
Pour the dough, leaving a bit of space from the top edge. If you have any leftover, you can make a muffin.
Bake in a static oven at 356°F for about 25 minutes. Times may vary depending on your oven, so check the doneness with a toothpick.
Once done, let them cool for a few minutes then gently remove the mini pandoro from the molds.
Turn them upside down on a plate and let them cool completely, finally sprinkle them with powdered sugar.
The soft mini pandoro are ready, delicious and fragrant!
Tips and Notes
You can also scent them with tangerine zest, or with a special pandoro aroma.
You can use a plant-based drink instead of milk if you are intolerant.
If during baking the mini pandoro swell too much, level their base with a knife before dusting them with sugar.
