A side dish with artichokes just flavored with diced prosciutto, a simple dish that pairs with roasted or boiled meat and fish. The artichoke flowers with prosciutto require boiling in a saucepan and a final baking step with added ham to flavor everything.
Meanwhile, a tip considering my mistake… you need mammole or Romanesco artichokes, not these small frail ones, but I only found these at the supermarket near my house and being stubborn, I absolutely wanted to make this recipe today!
A bit of patience is needed to peel the artichoke petals but the result is appetizing and pleasant!

INGREDIENTS
- 4 artichokes (large)
- 1 oz oz prosciutto
- to taste salt
- to taste pepper

HOW TO PREPARE ARTICHOKE FLOWERS
Put the high-sided saucepan filled with water on the flame, and when it comes to a boil, add the whole artichokes without the stem and use a plate to keep them completely submerged in the liquid so they don’t float!
Cover with the lid and let cook for about 25/30 minutes, but be careful they do not become too soft!
Once cooked, take the artichokes and dip them in ice water to cool them down.
Once cooled, start removing the outer leaves until you reach the more tender ones.
With kitchen scissors, remove the tips and start forming the artichoke flowers.
At some point, I had to stop because the center was coming apart, but if you get mammole, everything will be easier and more aesthetically pleasing.
Place the artichoke flowers on the baking tray, add pieces of prosciuttocrudo drizzle with extra virgin olive oil, and season with salt and pepper.
Bake at 392°F for about 10/15 minutes and serve immediately at the table.
