Ingredients for Grilled Eggplants
- 1.1 lbs eggplants
- 2 cloves garlic
- 2 tbsps extra virgin olive oil
- 3 hot peppers
- 4 tbsps white wine vinegar
- 1 sprig parsley
- to taste salt
How to prepare Grilled Eggplants
Wash the eggplants. Remove the stem and base. Cut them into thin slices. I prefer not to peel the eggplants first, but if you prefer, you can peel them first.
Heat a grill pan. Grill the eggplant slices. Arrange the eggplant slices on a large plate. I recommend seasoning them in layers: make a first layer slightly overlapping, season and proceed with another layer, so as to flavor them well.
Add a pinch of salt, a drizzle of extra virgin olive oil, a tablespoon of vinegar, chopped hot pepper, chopped garlic, and parsley. Continue this way until all the seasoning is used. Let the eggplants marinate for at least an hour

If there are leftover eggplants, store them in a container in the fridge for 1-2 days
