Savory truffles, simple and delightful finger food to serve during the holidays, as an appetizer or for an aperitif. They are very easy to make and ready in a few minutes, without cooking. The balls are made with ricotta and cream cheese, with added ham and shredded bread… while for the coating you can get creative with many ingredients of your choice: in my case, I chose pistachios, almonds, poppy seeds, and a mix of paprika and herbs. You can create the truffles in many different flavors, with their colors they will make your holiday menu more beautiful and appetizing!

Ingredients

  • 3/4 cup ricotta
  • 1/2 cup cream cheese
  • 1 slice whole grain sandwich bread (or 1-2 tablespoons breadcrumbs)
  • 1.5 oz ham (prosciutto or cooked)
  • chopped pistachios

  • poppy seeds
  • sweet paprika

Preparation

  • With the help of a blender, chop the ham finely and transfer it to a bowl.

    Using the blender again, chop the sandwich bread and place it into the bowl.

  • Add the ricotta and the cream cheese, mix well, and season with salt and pepper (1).

  • Prepare 4 small plates or bowls, distributing chopped pistachios, chopped almonds (I recommend chopping almonds with the skin), poppy seeds, paprika mixed with herbs into each (2).

  • Using a teaspoon and your palms, form evenly sized balls and roll them in the prepared coatings to cover the entire surface (3).

  • The savory truffles are ready to be served!

    If you prepare them in advance, store them in the refrigerator in a well-sealed container. To prevent sticking, I recommend placing them in paper cups (like those used for chocolates).

Tips and Variations

You can also coat the balls with: chopped walnuts, dried cranberries, sesame seeds, or other mixed seeds, freshly chopped chives.

You can replace the ham with smoked salmon. You can substitute the sandwich bread with ready-made breadcrumbs.

You can flavor the mixture with grated Parmesan cheese.
