The gluten-free cookies with dark chocolate are very simple to make. Besides being gluten-free they are also lactose-free. To prepare them, I used lactose-free milk, but you can also use another plant-based drink of your choice.

Being gluten-free and lactose-free, they are designed for those who are intolerant, but they are suitable for everyone.

Ingredients

  • 1 egg
  • 1/4 cup sugar
  • 3.5 oz dark chocolate (to melt)
  • 2 tbsp lactose-free milk
  • 2 tbsp sunflower oil
  • 1 tsp gluten-free baking powder
  • 2.5 oz dark chocolate (in flakes)
  • 3/4 cup rice flour
  • 3/4 cup gluten-free potato starch
  • to taste sugar (to finish)
  • to taste gluten-free powdered sugar (to finish)

  • 1 Spoon
  • 1 Small pot
  • 1 Baking tray
  • 1 Parchment paper

How to Make Gluten-Free Cookies with Dark Chocolate

  • In a bowl, add the egg and sugar. Mix with a spoon.

  • In a small pot, add the chopped dark chocolate and milk. Move to the stove and melt the chocolate, stirring continuously.

  • Add the melted chocolate to the dough. Also, add the oil and mix with the spoon.

  • Add the baking powder, chopped chocolate, rice flour, and potato starch. Mix with the spoon until you get a homogeneous mixture.

  • Let the mixture rest at room temperature for about 30 minutes.

  • With the help of a spoon, take small portions of dough and place them on a baking tray lined with parchment paper.

  • Sprinkle each cookie first with granulated sugar and then with powdered sugar.

  • Bake in a preheated oven at 355°F (180°C) and cook for about 15 minutes. Please check the cooking times based on your oven.

  • Remove from the oven, let cool slightly, and serve.
