September Sweet Flatbread

September sweet flatbread, a low white pizza or focaccia with lots of black grapes on top, obviously I couldn’t help but make it with whole wheat flour and white grapes. It’s called the spirit of contradiction. The September sweet flatbread because I cannot define it as pizza or focaccia, it is not savory but not too sweet either with only 3 tablespoons of sugar, September because this is the season of grapes, ripe, abundant, and very sweet.

Ingredients

  • 2 1/2 cups whole wheat flour
  • 6 tbsp sugar
  • 2 tbsp olive oil
  • Half packet dry yeast
  • 2/3 cup water
  • 1 pinch salt
  • 10 1/2 oz white grapes

  • Non-stick baking tray
  • Bowl
  • Cutting board
  • Kitchen towel
  • Kitchen scale

Steps

  • I put the whole wheat flour in the bowl, in the center

  • added the sugar

  • The dry brewer’s yeast.

  • the oil, the water, better if warm. First with the fork and then with the hands, I work the mixture until smooth. Cover with a kitchen towel and let rise for an hour in the oven turned off with the light on.

  • Meanwhile, after thoroughly washing the grapes, I divide them in half and remove the seeds using a teaspoon. Brush the tray with oil and spread the risen dough, arrange the grape halves with the cut side on the dough. Sprinkle with sugar and with the oven at 356°F (180°C) bake the September sweet flatbread for 30 minutes.
