- 1.5 cups Carnaroli rice
- 3 cups frozen peas
- 2 shallots (or one white onion)
- 4.25 cups vegetable broth (made with celery carrot and onion)
- 2 oz Parmesan cheese
- to taste extra virgin olive oil

First, wash the vegetables for the broth, wash and peel the carrot, wash and remove any strings from the celery, wash and peel the onion.
Place the vegetables in a pot, add 2 cups of water, 1 tablespoon of oil, and salt. Bring to a boil.
After cooking the vegetable broth for about 15/20 minutes, strain it and keep it warm.

First, focus on the shallot, (which can also be replaced with a white onion) that should be finely chopped with a knife or, if you want an even finer result, you can process the onion in a mixer.
Put the shallot to sauté in plenty of extra virgin olive oil, and when it starts to wilt, add the peas.
Salt to taste and continue cooking for a few minutes.
The peas, in fact, should remain quite firm.
(If necessary, add half a ladle of vegetable broth).
Now take a mixer and blend about half of the peas you just prepared until you have obtained a creamy and homogeneous consistency.If it turns out very dense, thin it with some vegetable broth.
Now in a saucepan, sauté more shallots in extra virgin olive oil and add the rice so that it toasts well.
Add the broth, little by little, to continue cooking the rice.
After a couple of minutes, add the peas you just blended and continue cooking.
Add more vegetable broth if necessary.
When the rice is ready, proceed with the creaming, add the other peas set aside earlier, and grated cheese.
If you like, a knob of butter fits perfectly and cream with the heat off.
Sauté everything for a few minutes, and your pea risotto will be truly ready to serve to your guests while still hot, perhaps sprinkling again with grated cheese
