Especially for our little ones who have sugar problems, they will surely be a nice surprise, with natural and healthy ingredients.
In these cookies, we will find the inviting aroma of cinnamon, ginger, cloves, nutmeg, and cardamom gently spreading from the kitchen while preparing these delightful sugar-free Gingerbread Men with a low glycemic index.
You can make these cookies in any shape and decorate them with sugar-free white icing or dark chocolate.
Additionally, besides being delicious, they are a perfect choice for those following a low-carb and gluten-free diet.
We will use coconut flour, along with aromatic spices, which will give these cookies a unique and enveloping flavor.

- 3/4 cup coconut flour (plus extra for processing, remember not shredded)
- 2 tsp ground cinnamon
- 2 tsp ground ginger
- 1 pinch ground cloves
- 1 pinch nutmeg (ground)
- 1 pinch star anise (powdered)
- 1/2 cup erythritol (or 2 1/2 tbsp stevia)
- 2 eggs (large)
- 3 tbsp coconut butter
- 1 packet vanillin
- 1 orange zest (grated)
- 1 pinch salt
- 1/4 cup powdered erythritol (confectioners)
- to taste water (a few drops)

Steps
Let’s prepare
We will use a stand mixer or Thermomix to create a well-worked dough
Place all the ingredients in the bowl of the stand mixer or your Thermomix,
starting with the eggs, coconut butter, and then the rest of the ingredients.
Activate the stand mixer and let it work until the mixture is well blended; it will take 5-10 minutes.
With the Thermomix, use the kneading mode for 5 minutes.
Dust a work surface or a sheet of parchment paper with coconut flour and place the dough, then roll it out with the rolling pin to a height of 1/2 inch to avoid having cookies that are too thin. If you notice the dough sticking to the rolling pin, dust with more flour.
Now place the rolled-out dough in the fridge for 10 minutes, and preheat the oven to 340°F (ventilated).
Then take the cookie cutters, brush them inside with oil, and cut out many gingerbread men or, if you prefer, other shapes like stars, etc.
After the preparation of the sugar-free Gingerbread Men is complete,
you can add a light dusting of coconut flour if you like, I didn’t add it because I wanted to glaze them.
Now you can bake for 10-12 minutes if you desire soft cookies; otherwise, if you want hard ones, let them bake for an additional 2 minutes.
Now that our sugar-free Gingerbread Men are baked, let them cool while we prepare to decorate with sugar-free icing.
In a small bowl, pour the powdered erythritol, add a few drops of water, and mix with a whisk until you get a smooth and homogeneous mixture.
If you want to make colored icing, you can add food coloring drops and mixIf you want to prepare the sugar-free icing with the Thermomix, insert the butterfly, then pour the powdered erythritol and a few drops of water into the bowl and set to speed 3.
Checking from the oven, you can add more drops of water if needed until you get the consistency you desire.
If you want to decorate the gingerbread men with dark chocolate,
you can dip part of the cookies in chocolate simply melted in the microwave or in a double boiler
While your sugar-free gingerbread men cookies are still on parchment paper, use a brush to drop some glaze or, if you like, melted chocolate here and there.

Notes
As you have seen, it was not possible to create the usual decorations with a piping bag because the icing with erythritol does not allow it, so you can either drop dots on the cookies as I did or dip them directly in the icing or melted chocolate.
