Ingredients
- 3 eggs
- 1 cup sugar
- 1 lemon (juice and zest)
- 1 packet baking powder
- 1 1/2 cups all-purpose flour
- 3 tbsps potato starch
- 1/3 cup sunflower seed oil
- 1 egg
- 1 lemon juice
- 1/4 cup potato starch
- 1/2 cup sugar
- 2/3 cup water

How to prepare the filled lemon cake with lemon cream
In a bowl, add the eggs and sugar. Mix with the electric mixer, being careful not to form lumps.
Add the oil and the juice of one lemon. Mix with the electric mixer.
Add the flour, starch, baking powder, and the grated zest of an untreated lemon. Mix with the electric mixer, being careful not to form lumps.
Pour the obtained mixture into a 9-inch previously greased and floured pan.
Bake in a preheated, static oven at 350°F and cook for about 30 minutes. Please verify the cooking times based on your oven by doing the toothpick test.
Meanwhile, prepare the cream.
In a bowl, add the egg and sugar. Mix with the electric mixer.
With the mixer running, slowly add the lemon juice and water.
Finally, add the starch. Mix everything well, being careful not to create lumps. You should obtain a smooth and homogeneous mixture.
Pour the mixture into a saucepan and move to the stove. Cook the cream until it thickens. Set aside.
Remove the cake from the oven, let it cool completely, then cut it in half and fill it.
If you like, sprinkle with powdered sugar.
