- 10.5 oz sausage
- 2 potatoes (medium size)
- 2 zucchini (medium size)
- to taste extra virgin olive oil

Steps
First, wash the potatoes and zucchini well. Peel the potatoes and cut them into chunks about 1-1.5 inches. Trim the zucchini and slice or chop them into pieces the same size as the potatoes.
In a pot of boiling salted water, immerse the potato chunks and cook them for about 2-3 minutes, they should be firm, barely cooked otherwise they will fall apart. Drain them well.
Note: This step helps the potatoes cook more evenly on the grill or in the oven.
Cut the sausage into chunks slightly larger than the vegetable pieces. If you prefer, you can remove the casing from the sausage and cut it into pieces similar in size to the vegetables, forming small balls.
Now, thread the sausage, potato, and zucchini chunks onto wooden or metal skewers, alternating them and trying to vary the order for a more colorful result. You can change the order as you like.
Place the skewers on a baking sheet lined with parchment paper (for oven cooking) or on a plate (if grilling). Drizzle with a little extra virgin olive oil, salt, pepper, and, if desired, chopped rosemary or other aromatic herbs.
Preheat the oven to 392°F (fan-assisted).
Bake the skewers for about 25-35 minutes, or until the potatoes are tender and the sausage is cooked through and golden. Turn the skewers halfway through cooking to ensure even browning.
Heat the grill well. Place the skewers on the hot grill and cook for about 15-20 minutes, turning them often, until the sausage is cooked and the vegetables are tender and slightly charred.
