Herring is a very economical, nutritious fish and rich in Omega 3, widely used in Venetian cuisine and beyond. Combined with green apples in this case, they complement each other perfectly, balancing the very salty flavor of smoked herrings.

Everything is dressed with lemon juice, which tones down the saltiness of the herring, making it a crowd-pleaser.

Ingredients for Smoked Herring, Apple, and Tomato Salad

  • 14 oz smoked herring (fillets)
  • 1 green apple
  • 2 plum tomatoes
  • to taste lamb's lettuce (or other small leaf greens)
  • 2 cloves garlic
  • 2 tablespoons chopped parsley
  • 1 cup milk (to soak the herring)
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons lemon juice

Steps

  • Soak the fillets of herring in milk, keeping them in the fridge for at least 8 hours.

    This step helps reduce the saltiness typical of smoked herrings.

  • Rinse the herring fillets well, dry them with kitchen paper, and place them in a glass bowl.

    Make an emulsion with extra-virgin olive oil, lemon juice, the garlic sliced, and parsley, and drizzle over the fillets.

  • Let them marinate for at least 1 hour.

  • Cut the apple into very thin slices, slice the tomatoes, wash and dry the salad greens.

  • Assemble the herring salad by draining the fillets from the oil and cutting them into pieces.

  • On a serving plate arrange the green salad, top with tomatoes, apple slices, and smoked herring, drizzle with the marinade, and sprinkle with additional parsley.

Storage, Tips, and Variations

It’s best to eat the prepared smoked herring on the same day, otherwise the tomatoes and salad will lose their freshness.

Do not salt the salad, as the herring is already quite salty.

To add more crunch, you can add your choice of nuts like walnuts.

You can replace lamb’s lettuce with your preferred salad greens as long as they’re small-sized; otherwise, chop them into pieces.
