Turkey Breast in Appetizing Sauce

Short on time? Not in the mood to cook? Just have time for a quick grocery run? Then this turkey breast main course enriched with a super tasty green sauce might be just what you need. It requires no cooking, it’s ready in a matter of minutes and is incredibly simple. A perfect recipe for all seasons that I often turn to because, thank goodness, everyone loves it. And I assure you, no one will think it’s such a quick dish, quite the opposite! But I’ll tell you more… you can serve it cold (perhaps with a crunchy salad or boiled potatoes) or use it to fill sandwiches and wraps, giving them a gourmet touch. In short… a smart dish not to forget!

Ingredients for Turkey Breast in Appetizing Sauce

Sliced turkey breast can be found at the deli counter in supermarkets.

  • 5.3 oz turkey breast (thinly sliced)
  • 1.8 oz green olives (pitted)
  • 1 tbsp salted capers
  • 2 anchovy fillets in oil
  • 1 clove garlic (small)
  • 1 bunch parsley
  • extra virgin olive oil
  • black pepper

  • 1 Small bowl

Preparation of Turkey Breast in Appetizing Sauce

  • Wash the parsley leaves and pat them dry with kitchen paper.
    Rinse the capers under cold running water and dry them.
    Peel the garlic and remove the central core.

  • In a chopper, place the parsley, garlic, capers, anchovy fillets, and green olives and chop intermittently until you get a coarse mixture: it should not become a paste.

  • Transfer the chopped mixture into a small bowl and add a few tablespoons of oil. This sauce can easily be prepared in advance and stored in the refrigerator.

  • Arrange the turkey breast slices on the serving plate and season them with the prepared green sauce.

    Sprinkle with freshly ground black pepper and drizzle with a little raw oil.

    If you have time, let it marinate for about half an hour, it will be even more appetizing. But I assure you it’s delicious even when prepared and eaten right away! Enjoy! Paola
