Wrap the roll in its parchment paper and place it in the freezer for about 25 minutes, this way it will be much easier to cut the swirls, and in the oven, the pastry will remain crispier and flakier.
Remove the roll from the freezer and cut, with a smooth blade knife, into swirls about 0.8 inches wide.
Transfer the swirls onto the baking tray in the oven, spacing the swirls well apart and brush them with a beaten egg yolk mixed with a dash of milk.
