Let’s start making cheese crackers!
In the mixer bowl, place the flour, grated Parmesan cheese, salt, and cold butter cut into pieces. Cover with the lid and pulse intermittently until the mixture resembles grated cheese.
Next, add the egg yolks and the whole egg, and pulse again until the mixture clumps to one side of the bowl. Remove from the mixer and place the resulting savory dough on a work surface, wrap it in plastic wrap, and let it rest in the fridge for a couple of hours.
Take the savory dough out of the fridge and let it sit at room temperature for about ten minutes. Then cut a portion and roll it out with a rolling pin to about 1/8 inch thickness. Use a cutter to make your crackers. Continue until all the dough is used.
Place the cheese crackers on a baking tray lined with parchment paper or a perforated mat. Prick them with a fork and bake in a preheated oven at 350°F for about 15 minutes.
