Baked Vegetables, an Easy and Tasty Recipe with Yogurt Sauce

The baked vegetables are a delicious side dish, simple to prepare, and great to cook with all the vegetables we have available. We choose the mix of vegetables based on what we like or what we have leftover in the fridge, and then we just need to season the vegetables and bake them to get a healthy and genuine side dish, perfect to accompany with the yogurt sauce we suggest in our recipe, which will make these vegetables creamy and appetizing, but can be used in many other ways. Not only as a side dish to accompany meat, fish, eggs, or legumes, but also as a base for creating other dishes. In fact, these baked vegetables can become the ideal condiment for pasta, rice, or other grains like barley, farro, quinoa; they are great for enriching bruschettas, crostini, but also wraps, focaccias, and tortillas; they can also be a great filling for savory pies to be prepared with puff pastry or shortcrust pastry. In short, one recipe for many types of dishes!

Moreover, as we mentioned earlier, we can use the mix of vegetables we prefer. We used zucchini, carrots, and cauliflower, which were the vegetables we had leftover in the fridge and needed to consume, but many other vegetables such as broccoli, bell peppers, eggplants, potatoes, etc., are perfect. For a perfect cooking of the vegetables, it will be essential to cut everything to the same dimensions, and to make the cooking faster, it’s surely preferable to cut all the vegetables the same, whether they are diced, sliced, or wedged.

The preparation is very simple: cut the vegetables into cubes, and divide the cauliflower into florets. Gather carrots, zucchini, and cauliflower in a baking tray together with a sliced onion and season with oil, oregano, salt, and pepper. Bake for about 40 minutes at 356 degrees Fahrenheit. To accompany the baked vegetables, we can prepare a sauce with Greek yogurt, tahini, oil, turmeric, and salt.

A versatile dish to try in a thousand variations, but we assure you that with the yogurt sauce, these baked vegetables are really delicious. You just have to try them!

Simo and Cicci recommend

You can store baked vegetables in the fridge well closed in an airtight container for about two days. You can also store the yogurt sauce well closed in a container in the fridge. Freezing is not recommended for both cooked vegetables and the sauce.

You can use the mix of vegetables you prefer in addition to carrots, zucchini, cauliflower, and onion. You can also use broccoli, bell peppers, eggplants, squash, potatoes, etc. You can also use the mix of vegetables taking into account the seasonality, for example, asparagus, peas, and zucchini for the spring season, bell peppers, tomatoes, and eggplants for summer, squash, mushrooms, and potatoes for autumn, cauliflower, broccoli for winter.

To ensure they cook evenly, try to cut all the vegetables to the same thickness and possibly small sizes. In any case, the cooking time may vary depending on the type of oven used.

You can also add herbs and spices of your choice to the vegetables such as rosemary, thyme, marjoram, paprika, chili pepper.
