The preparation of raw artichoke salad is simple and quick, but requires some attention in cleaning the artichokes, to remove the tougher outer leaves and the inner “choke.” Once the artichokes are cleaned, just slice them thinly with a mandoline and dress them with oil, lemon, garlic, salt, and pepper.
To finish, I added some Grana Padano shavings to give a touch of savoriness. If desired, you can also add fresh arugula leaves and toasted almonds (or pine nuts).

Steps
First, fill a bowl with cold water and add the juice of the lemon to prevent the artichokes from oxidizing and turning black.
Remove the tougher outer leaves of the artichokes, cut off the tips and stem; cut the artichokes in half and remove the internal “choke” with a paring knife. Slice the artichokes into thin slices and immerse them immediately in the acidulated water.
Drain the artichokes well and dry them with paper towels. In a bowl, dress the artichokes with extra virgin olive oil, salt, and pepper, and add the remaining lemon juice to taste. Add some Grana Padano shavings and serve.
