Carnival Chatters

Carnival chatters are so good, the most characteristic sweet of this cheerful and fun party. I can’t help but prepare them because we are greedy for them at home along with the castagnole. The recipe is very easy, few ingredients and our chatters or frappe or cenci or carnival lies are ready, so let’s get our hands in the dough and follow the recipe

Ingredients for Carnival Chatters

  • 2 cups all-purpose flour
  • 2 tbsps butter
  • 3 tbsps sugar
  • 2 eggs
  • 2 tbsps white rum (or Strega liqueur)
  • 1 pinch salt
  • 1 lemon zest
  • to taste peanut oil
  • to taste powdered sugar

You will need

  • Pastry board
  • Pastry wheel
  • Rolling pin
  • Mixer
  • High-sided pan
  • Tongs

Preparing Carnival Chatters

  • On the pastry board, place the sifted flour in a well, in the center beat the eggs with a pinch of salt using a fork. Add the sugar, soft butter, rum, and lemon zest, and knead until you get a smooth, compact dough. Wrap it in plastic wrap and let it rest under a towel for half an hour. 

    Roll out the dough. I used the pasta roller attachment of my Kenwood mixer, but you can use the classic pasta machine, and create rectangles, then make cuts in the center with the pastry wheel.

  • Bring the peanut oil to a temperature of 338°F and fry these dough rectangles, flipping them and letting them cook until golden.

  • Let them drain on absorbent paper, and once cool, sprinkle with powdered sugar.
