The pizzaiola bread loaf is as delightful as pizza and much simpler to prepare: a clever idea to satisfy pizza cravings without kneading, without rising, and without effort.
Great as a recycling recipe to use up stale bread but not only.
For my pizzaiola bread loaf, I used a fresh durum wheat semolina loaf and topped it as if it were a margherita pizza: tomato, mozzarella, oregano.
No need to slice the bread, just divide the loaf as if you were stuffing it: easy and fast!
The lower part with less crumb will be crunchier.
The upper part with more crumb will be softer.
In theory, toasting the bread lowers its glycemic index.
Perfect for festive occasions and as an alternative to traditional cut pizzas [which require time for dough preparation and rising], it will delight both adults and children.
For portions, adjust according to the weights indicated on your meal plan for bread and cheese.
Using the entire indicated weight of bread and cheese in your meal plan turns it into a single dish concentrating the characteristics of a balanced meal into one course.

- tomato sauce (homemade)

- 1 pinch mixed peppercorns (with grinder)

Preparation
For preparing my pizzaiola bread loaf, I used a fresh durum wheat semolina loaf and topped it as if it were a margherita pizza: tomato, mozzarella, oregano.
Purchase loaf style bread made of durum wheat semolina or whole durum wheat semolina.
Cut the loaf as if you were stuffing it.
The lower part with less crumb will be crunchier.
The upper part with more crumb will be softer.In a bowl, combine:
• diced or julienned mozzarella for pizza;
• tomato sauce;
and mix.Line a baking tray with a parchment paper sheet and place the bread on top with the side to be topped facing up.
Top the bread with mozzarella and sauce.
Sprinkle oregano.
Grind the pepper.Briefly preheat the oven.
Bake at 356°F in a fan oven for 10 minutes until the mozzarella is melted.Plate up
Your pizzaiola bread loaf is ready.
