- 8.8 oz mortadella (whole piece)
- 4.2 oz ricotta
- 1/4 cup fresh heavy cream
- 0.7 oz grated Parmesan

Let’s prepare the mortadella mousse together!
Preparing the mortadella mousse is very simple and requires only one step: blend all the ingredients together to get a fantastic cream to use as you like. I even used it to dress pasta! The only advice is if it seems too stiff or dry, you can add a little milk, or if it’s too soft, a spoonful of Parmesan.
In the mixer bowl, place the mortadella cut into pieces, grated Parmesan, ricotta, and liquid cooking cream, then turn on the mixer and blend until you obtain a smooth cream. I didn’t add any salt or pepper because my mortadella was flavorful and seasoned on its own, but you can add a little if you wish.
Try to achieve the smoothest and most homogeneous cream possible if you plan to put it in a piping bag, otherwise the chunks will block the mousse from exiting the nozzle.
