Sicilian Rotisserie Buffet Rolls

Sicilian rotisserie buffet rolls, delicious, easy, and economical to make, are a very soft Sicilian brioche bun. We can stuff them as we like; today, I present them in a Christmas version, but they are great for snacks, picnics, or making hamburgers.
Today, being an appetizer, I prepared them in mini size, but the size can be adjusted depending on how you want to fill them, for buffet, they are perfect for appetizers, aperitifs, or kids’ parties.

Recipe by hand, in a stand mixer, and also with the Bimby.

  • 1.5 cups water
  • 1.9 oz lard
  • 0.35 oz fresh yeast
  • 1.4 oz sugar
  • 0.53 oz salt
  • to taste sesame seeds (or other seeds of choice)

What we need to make

  • 1 Mixer I use the Bimby
  • 1 Work surface
  • 1 Plastic wrap
  • 2 Baking trays
  • 1 Oven

Steps

To prepare

  • Start by taking the lard out of the fridge at least 1 hour before making the dough.

    Place the flour in a stand mixer or a bowl, make a well in the center, and add the other dough ingredients: warm water, sugar, crumbled yeast, and lard.
    We will add the salt later, not now.

  • Start kneading; when the dough is somewhat formed, if you wish, you can transfer it onto a work surface as you find it more convenient.
    After about 10 minutes of working, we can add the salt and continue working it for another 5 minutes.

  • If kneading with the Bimby, place water, yeast, and sugar in the bowl and mix for 3 min. at 99°F speed 1.
    Add the flour and lard and knead for 3 minutes on dough mode.
    Add the salt and continue for 2 minutes on dough mode. Finally, transfer the dough onto a work surface.

  • Now that it is ready, we transfer it to a bowl and let it rise covered or in the oven with the light on for 4 or 5 hours.

  • At this point, transfer the dough onto the work surface and divide it into 20 balls if you want to make minis or 10 balls if you want to make hamburger buns.

  • Work the balls well, forming a round base.

  • Place them on a baking tray well spaced apart and let them rise for another hour in a warm place so that the balls will double in size

  • Now prepare the beaten egg and brush them.

  • and bake in a preheated oven at 392°F static or better at 365°F in a convection oven for about 15 minutes,

  • Once cooked, take them out of the oven and let them cool.

  • For this recipe, instead of cutting them in half, I made a hole in the center and filled them by putting cream cheese and ricotta in a piping bag, and inserted the nozzle inside each roll
