The shortcrust pastry flowers are simple cookies to make. You won’t need any molds or rolling pins. They are perfect to make with your children. You can have fun together and choose the color of the petals and the center.

Ingredients

  • 2 cups all-purpose flour
  • 1 lemon zest
  • 1/2 cup butter (in pieces)
  • 1 egg
  • 2/3 cup sugar
  • 1 tsp baking powder
  • 2 tbsps unsweetened cocoa powder

How to make shortcrust pastry flowers

  • In a bowl, place the flour, lemon zest, and butter. Knead with your hands.

  • Add the egg and sugar. Mix with a fork.

  • Add the baking powder and knead by hand.

  • Transfer to a surface and work the mixture until you get a smooth, compact, and homogeneous dough.

  • Divide the dough into two equal parts. Add cocoa to one and knead well.

  • Wrap the two pieces in plastic wrap and let rest in the fridge for about an hour.

  • After the resting time, take small portions of dough and form balls.

  • Form the flowers by placing the balls: one in the center that will be the middle and six balls around that will be the petals. Make marks on the petals with a toothpick. I made 16 cookies, but the number depends on the size of your balls.

  • Place the flowers on a baking tray lined with parchment paper and bake in a preheated static oven at 350°F (180°C). Let them bake for about 10/12 minutes. Please check the cooking times based on your oven.

  • Remove from the oven, let cool slightly, and serve.
